Recipe Of The Day : Southwestern Rice Pilaf Sabana Padeh

Ingredients (Bahan-Bahan)

  1. 2 Tablespoons extra-virgin olive oil. 
  2. 1  medium onion, medium diced
  3. 1  medium poblano, stemmed, seeded, and finely diced (1/2 cup).

  4. 4  large cloves garlic, minced
  5. 1-1/2  teaspoons chili powder.
  6. 1  teaspoon ground cumi.
  7. 1-1/2  cups long-grain white rice
  8. 1  teaspoon kosher salt; more as needed.
  9. 2-1/2  cupslow-salt chicken brot. 
  10. 1-1/4-ounce can diced tomatoes, drained well.
  11. 1-lime 
  12. 1/2  cup coarsely chopped fresh cilantro.
  13. 1 jalapeno, stemmed, seeded, and minced

    Preparation (Cara Membuat)
    1. In a heavy-based 3-quart saucepan with a tight lid, heat the oil over medium heat. Add the onion, poblano, and garlic, and reduce the heat to medium low. Cook for 3 minutes, stirring occasionally. Add the chili powder and cumin and cook, stirring frequently, until the onion is softened and the spices are very fragrant, about 3 minutes.
    2. Add the rice and salt, and stir well to coat each grain with oil. Toast for a full 5 minutes, stirring regularly to keep the grains separated and to prevent them from sticking to the bottom of the pan (the rice may turn opaque before 5 minutes is up, but keep going). Reduce the heat to low if there are any signs of scorching

       Tip : Fluff the rice by slipping the tines of a fork down into the rice alongside the edge of the pan. Gently lift and toss the rice toward the center of the pan. Continue this process as you work your way around the perimeter. Then add your finishing-touch ingredients and gently fold them in with the fork, using a similar gentle fluffing motion.
    3. Add the chicken broth and tomatoes, stir once, and bring to a boil over medium heat. Cover, reduce the heat to low, and cook for 18 minutes. Remove from the heat and let the pilaf sit, still covered, for 5 minutes. Meanwhile, finely grate 1 tablespoon zest from the lime, and then cut the lime into wedges.
    4. Once the pilaf has rested, remove the lid and fluff the rice with a fork. Using the fork, gently fold in the cilantro, jalapeno, and lime zest. Season to taste with salt. Serve with the lime wedges for spritzing over the rice.

Tips Hari Ini : Manfaat Makanan Pedas

Kurang "cetar membahana ulala" rasanya kalau kita makan rendang tapi tidak pedas, atau makan lalapan tanpa sambal. Selain menambah rasa, makanan pedas juga sangat bermanfaat bagi kesehatan kita looh. Berbahagialah Anda yang berprinsip tiada hari tanpa makanan pedas karena kegemaran ini bisa berubah menjadi manis untuk kesehatan. Rasa pedas di lidah tidak hanya efektif untuk meningkatkan nafsu makan, tapi juga berkhasiat mengatasi sejumlah keluhan penyakit. 

Selama berabad-abad, cabai telah digunakan sebagai obat untuk peradangan serta melancarkan sirkulasi darah. Faktanya, jika darah mengalir lebih cepat, tubuh akan lebih cepat menggantikan sel-sel yang rusak dan juga dapat mengeluarkan toksin dari tubuh.

Tentu saja, makanan pedas ini harus dikonsumsi secara bijaksana (tidak berlebihan), terutama jika anda memiliki perut yang sensitif atau tidak bisa menoleransi makanan pedas. Berdasarkan beberapa penelitian, cabai dan makanan pedas memiliki banyak khasiat, diantaranya:

1. Menurunkan berat badan
Cabai mengandung capsacin yang akan mempercepat metabolisme dan membantu tubuh membakar kalori lebih cepat. Hal ini terjadi karena capsaicin meningkatkan temperatur tubuh dan berperan dalam meningkatnya detak jantung. Studi menunjukkan orang yang hobi makan pedas biasanya makan dalam porsi sedikit sehingga berat badan lebih terjaga.

2. Menyehatkan Jantung
Cabai menyehatkan jantung dengan cara mencegah pembekuan darah. Penelitian juga menunjukkan kadar kolesterol jahat/LDL bisa mencegah oksidasi yang bisa menyebabkan penyumbatan pembuluh darah. Capsaicin juga efektif melawan inflamasi, yang telah diidentifikasi sebagai faktor risiko penyakit jantung.

3. Melancarkan sirkulasi
Makanan pedas melancarkan sirkulasi dan menurunkan tekanan darah. Cabai juga membuat dinding pembuluh darah menjadi lebih kuat karena kandungan vitamin A dan C-nya.

4. Anti-kanker
Banyak penelitian menunjukkan konsumsi teratur makanan pedas akan mengurangi risiko kanker. Capsaicin memperlambat pertumbuhan sel kanker dan pada banyak kasus sel-sel kanker mati tanpat merusak sel sehat di sekitarnya.

5. Meningkatkan fungsi cerna
Manfaat cabai dalam saluran pencernaaan adalah meningkatkan sirkulasi darah di perut dan meningkatkan lapisan mukus. Capsaicin juga membantu membunuh bakteri H. pylori penyebab sakit maag. Akan tetapi jika anda mengalami heartburn (rasa panas) setelah makan pedas, cobalah tablet antiacid yang akan menetralisir asam di lambung.

6. Melancarkan pernapasan
Makanan pedas bertindak seperti ekspektoran dan membantu penderita asma, bronkitis kronik, sinuistis, dan penyakit pernapasan lainnya untuk bernapas lebih baik.

Recipe Of The Day : Beef Rendang


Spicy Indonesian beef dish in a almost dry coconut sauce. Suitable as a main or side dish.

Ingredients:


  • 500 gram Rump steak.
  • 2 Onions.
  • 4 Garlic cloves.
  • 3 Fresh red chillies.
  • 2½ cm Ginger root
  • 1 teaspoon Turmeric.
  • 1 tablespoon Paprika.
  • 1 stalk Lemon grass.
  • 3 Kaffir Lime leaves.
  • 600 mili liter Coconut milk.
  • 75 mili liter water.

Preparation:

First, Put the Onions, Garlic, Chillies, Ginger, Paprika, Turmeric and Water in a food processor and make into a smooth paste.
Second, dice the meat and mix with half the paste. Set aside.
Next, Put the other half of the paste into a heavy sauce pan and add the coconut milk, chopped lemon grass and lime leaves. And the, Boil without the lid for about 30 min. until mixture is reduced to half. Add the meat mixture and return to boil. Reduce heat and simmer uncovered, stirring regulary, for a further hour till the steak is tender. Finally, Serve with boiled rice.
